Fix build with TeX Live 2024+.

On TeX Live 2024+ the document doesn't build, with the following error:

! Package minted Error: Package option "outputdir" is no longer needed with minted
v3+; the output directory is automatically detected for TeX Live 2024+, and 
the environment variable TEXMF_OUTPUT_DIRECTORY can be set manually in other cases.

This merge request applies the recommended fix, but someone with an older version (@rabsil ?) has to check if this still works on their system.
